Hi tom, when a dog goes racing I understand that the wrists remould ( be a better word) from running bends etc .So my question is, should we be training for this I.e only run them left handed on gallops etc in other word if there's a bend going right on my gallop am I risking more injury- when racing going left- when training going right-

No there is not a lot to worry about in that regard. Bone remodeling only strengthens those bones that are under repeated pressure week after week, but that process certainly does not weaken other bones.
The only time there is any real danger of bone fractures regardless of what bone remodeling has taken place, is when a greyhound suddenly twists sharply sideways as could happen if they were to accidentally chase a rabbit while free running, and even then ligament damage is more likely than bone fractures. Fractures are also more likely to occur due to the greyhound suddenly and unexpectedly placing one foot on a rock or hard surface while in full flight.

Thanks Tom, one other question- is pork OK to incorporate into the racing diet, maybe to give a change from red meat ?

Nothing wrong with pork, but like everything else making major changes to a racing greyhounds diet can with some greyhounds have the effect of upsetting the digestive system. So a change of the type of meat being fed should be introduced slowly by adding say just 100 grams each day until the full change in type of meat has been made, and even then it can take up to 14 days before everything in the dogs system to return to normal.
For that reason changes in the diet on a regular basis are not a good idea if you wish to maintain consistency in race track performances.
