Boiled chickpeas are an excellent source of nutrients but certainly not a common part of a greyhounds diet.
I see no problems in using boiled chickpeas two or three times a week to replace kibble in the diet from a nutritional point of view. However keep in mind that any change in the diet can often affect the way the digestive system functions, and the digestive system of many racing greyhounds can be upset quite easily. This in turn affects how the dog is feeling and that affects performances.
From that point of view when you get a greyhound performing satisfactorily on a specific diet, try not to vary it too much as that will have a negative effect on the dog. The only time when that does not apply is a soft meal after a hard run such as a stew, or when feeding stews to a greyhound in recovery after illness or spelling after a solid campaign.
Cheers, Tom
